Simple miso soup
A quick, comforting soup that showcases miso's savoury depth without overdoing the salt.
Pregnancy tip: Add the miso paste right at the end, off the boil — boiling miso can dull its flavour and destroy some of its beneficial fermentation compounds.
Ingredients
- 600ml dashi or vegetable stock
- 2 tbsp miso paste
- 150g silken tofu, cubed
- 1 sheet nori, torn
- 2 spring onions, sliced
Method
- Heat the stock gently in a saucepan until just below boiling.
- Ladle a little hot stock into a small bowl with the miso paste and whisk until smooth.
- Remove the pan from the heat and stir the miso mixture back in.
- Add the tofu and nori and let sit for a minute to warm through.
- Serve immediately, topped with spring onions.
