Slow-cooked mutton curry
A rich, well-cooked mutton curry — the long cooking time both tenderises the meat and ensures it's thoroughly cooked through.
Ingredients
- 800g diced mutton
- 2 onions, sliced
- 3 cloves garlic, crushed
- 1 thumb ginger, grated
- 2 tomatoes, chopped
- 2 tsp turmeric
- 2 tsp cumin
- 2 tsp coriander
- 1 cinnamon stick
- 3 tbsp oil
- Fresh coriander to serve
Method
- Heat oil in a large pot and fry onions until golden.
- Add garlic, ginger, and spices, and cook for 2 minutes.
- Add mutton and brown on all sides.
- Add tomatoes and enough water to cover, then simmer covered for 1.5–2 hours until the meat is tender and no pink remains.
- Check the sauce has thickened and season to taste.
- Finish with fresh coriander and serve with rice.
