Blue cheese and walnut pasta sauce
A rich, creamy pasta sauce that fully melts a soft blue cheese through, making it pregnancy-safe.
Pregnancy tip: Bring the sauce to a full simmer and keep it there for a couple of minutes to make sure the cheese is completely melted and piping hot throughout, not just softened.
Ingredients
- 100g soft blue cheese (e.g. Gorgonzola), crumbled
- 200ml double cream
- 1 clove garlic, crushed
- 50g walnuts, roughly chopped
- 300g pasta of your choice
- Black pepper, to taste
Method
- Cook the pasta according to packet instructions.
- In a separate pan, gently heat the cream with the garlic until it starts to simmer.
- Add the crumbled blue cheese and stir until fully melted and the sauce is bubbling gently.
- Simmer for 2–3 minutes, stirring, to make sure the cheese is completely heated through.
- Toss with the drained pasta and scatter over the walnuts and black pepper before serving.
